Breakfast Protein Muffins

Who’da thunk I’d be a recipe hacker!

Cooking isn’t my best subject, but I have to say over time (60 years!), I have improved. I’m always on the look out for high protein options and this breakfast muffin is a good example.

In fact, I put together a bonus high protein recipe book for my upcoming Summer Waist Management program. The recipes aren’t all originals, but they are delish.

If you’re looking for some accountability around simple habits that will help you maintain or even drop a few pounds this summer, along with unlimited access to LIVE and follow along workouts, this program is for you. The best part is that it’s less than $2 a day.

I have limited space in the program, check it out here: https://shawnak.securechkout.com/summer-waist-management

And here’s the recipe for the muffins!

1/2 c oatmeal (or 100g Kodiak pancake mix)
1 c egg whites
1 egg
1 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla
1/2 tsp cinnamon
2 tbsp monk fruit sweetener
33g (1 scoop) vanilla protein powder
1/2 c apple sauce

Blend WELL with a hand blender (mine literally blew up in flames on the first batch so I went to the Ninja blender).

Pour 1/2 c servings into silicone muffin tins. Bake at 350F for 30 min.

Makes 10 muffins

Serving size is 2 muffins:

And I hope to see you in the Waist Management program!
