Seriously I’m in trouble now…no excuse NOT to learn better cooking skills. So, I’m on a mission to be a better cook. More on that later…
I was supposed to be in Michigan to help my friend, “Mr. Finisher”, Mike Whitfield film his 2.0 program.
Snow in Toronto made other plans for me. I didn’t get far. I tried other routes, but the weather said, ‘No finishers, for you, Shawna K.’
Now if you know Mikey, he’s a big pancake fan and he promised me PANCAKES if I went to Michigan to sweat my butt off for him. I’m not even a big pancake fan, but I’m a big Mike Whitfield fan and friend, so I wanted to help him out.
Since I couldn’t share a heap of traditional pancakes with two of my fav fitness dudes in the biz (fire ball Brian Kalakay was also in the shoot), I decided to make my own. I didn’t do two days of non-stop filming, so I thought it best to try a little more healthy choice from the Gluten Warrior, Peter Osborne:
Gluten Free Paleo Approved Pancakes
Ingredients:
3 bananas
3 eggs
½ cup almond butter
1 Tablespoon cinnamon
Sea salt to taste
Directions:
Blend ingredients in food processor. Heat a saucepan with coconut oil. Pour pancake batter into pan in small pancakes. Sauté on each side for approximately 2 minutes. Top with your favorite topping and ENJOY! You can substitute the almond butter for other nut butters if you have allergy or prefer a different flavor.
A non-cooker’s comments (mine):
-I used a hand blender and it seemed to work fine
-I’m not the most patient cook so in the end, pancakes weren’t very pretty since flipping was tricky
-Greek yogurt increased the protein and took away some of the ‘sweet’ cuz these pancakes were pretty sweet (no need for syrup)
And the jury says…
Hannah’s verdict: ‘Not bad for your first try Mom’ (honestly, I don’t know if my gluten free pancakes will get better tasting, although they may get better looking from better flippin’)
Sam’s verdict: Like a good mom, I sent Sam to school and he had them cold after school. ‘Edible’ was the best I could hope for from this pancake connoisseur.
