Well saying eating brownies will help you lose weight is a bit of a stretch…but these brownies I made at least won’t sabotage your weight loss. (But this isn’t as catchy a title and you probably wouldn’t read this post if I just called it ‘healthy brownies’…)
I recently made a pan of brownies and served it up after dinner one night.
On occasion I’ll make ‘traditional’ type baking, very occasionally I might add. In fact, I feel my children could call the Children’s Help Line to complain of culinary abuse due to my lack of (good) cooking and baking…I usually won’t eat the baking that I make, clearly the sign of a bad cook if you ask me…
In any case, I served my son a warm brownie and had one for myself. He was suspect right away.
“What’s up with the brownies?” he asked before even taking a bite. (Something MUST be up with brownies that I make and then eat.) He knows me too well to think that I’d make ‘traditional’ brownies and eat a big one after dinner.
Turns out I found a yummy recipe for black bean brownies that I felt NO guilt eating. (They were super easy to make too.) They were ‘actually’ good as my son put it. I need to add a bit more sugar next time, I cut back too much and they were barely sweet. I liked them, but for a real ‘brownie’ taste, a little sweetness is a good thing.
Give this recipe a go, you’ll be pleasantly surprised as I was…I may just become a baker after all (not likely).
- 1 can black beans, rinsed and drained
- 3 eggs
- 3 tbsp vegetable oil
- 1/2 cup cocoa powder
- 1 pinch salt
- 2 tsp vanilla extract
- 3/4 cup white sugar (I used 1/3 cup brown sugar)
- 2 tsp instant coffee
- 1/2 cup chocolate chips
- Preheat oven to 350.
- Lightly grease a 8×8 square baking dish
- Combine black beans, eggs, oil, cocoa powder, salt, vanilla, sugar and instant coffee in a blender; blend until smooth.
- Pour mixture into the baking dish, sprinkle with chocolate chips if using.
- Bake until the top is dry and edges start to peel away from the sides, about 30 minutes.
